Tomato Beans Soup/Sopa de Tomate y Habichuelas

Ijust made this delicious soup and my kids loved it, so hope you like it too.

Ingredients:

  • 2 medium onions, chopped
  • 2 medium carrots, chopped
  • 1/2 red bell pepper, chopped
  • 1 can of sweet onion tomatoes
  • 1 can of vegetable stock
  • 1 can of refried beans, divided in two
  • 1 tbsp of balsamic white vinegar
  • 1 tbsp of tamari saouce
  • 1 small bunch of cilantro

Instructions:

  • On a deep pan saute the onions with the carrots and the bell pepper, wait till onions get soft, then add in the tomaoes and saute for another minute.
  • Then add the vinegar, the tamari and let sit for a minute so the vegetables can absorb the flavors.
  • Then add one of the half of the refried bean, the rest of the ingridients mix all ingredients well and let cook for about 30 minutes or the carrots are soft.
  • Now pour the soup on a blender and blend untill soup is all smooth.  Now you can serve on plates.
  • Use the other half of the refired beans as garnish with some fresh cilantro.

Acabo de hecho esta deliciosa sopa y mis hijos les encantó, así que espero que te guste.

Ingredientes:

2 cebollas medianas, picadas
2 zanahorias medianas, picadas
1/2 pimiento rojo picado
1 lata de tomates de cebolla dulce
1 lata de caldo vegetal
1 lata de frijoles refritos, dividida en dos
1 cucharada de vinagre blanco balsámico
1 cucharada de tamari saouce
1 pequeño racimo de cilantro

Instrucciones:

En una sartén profunda saltee las cebollas con las zanahorias y el pimiento, espere a que las cebollas se suavicen, luego añada los tomates y saltee por otro minuto.
A continuación, añadir el vinagre, el tamari y dejar reposar por un minuto para que las verduras puedan absorber los sabores.
A continuación, agregue una de la mitad del frijol refrito, con el resto de los ingredientes mezclar bien todos los ingredientes y dejar cocer durante unos 30 minutos o las zanahorias son suaves.  Ahora añade la sopa en una licuadora y licua hasta que la sopa quede suave y despues puedes servir en un plato.
Utilice la otra mitad de los frijoles refritos como decoracion con un poco de cilantro fresco.
