Cashew Ricotta Cheese/Queso Ricotta de Anacardo

S18449971_1569931413018100_997144523_n.jpgo the other day i made a vegan lasagna, and of course i wanted to make it as delicious as the meat version.  Cheese is a must on this meal but as vegan i dont eat cheese, the damage that dairy do to our bones is horrible (yes, to the contrari of what we been told all of our lives)  so i had to look for other solutions that will give it the same look and a grate taste.  Cashews are the base for so many vegan sauces, mayo, etc so i tried this recipe and i LOVED IT !!! So here it is and hope you enjoy it.



  • 1 cup of raw cashes, soaked for at least 4 hours of overnight
  • 2 garlic gloves
  • 1 tbsp of dijon mustard
  • 1/2 tsp of onion power
  • 1/2 cup of nutritional yeast to give that cheese flavor
  • 1/4 cup of lemon juice
  • 1/4 cup of vegetable broth
  • salt
  • peppper


  • Place all the ingredients on a blender,  pulse untill all ingredients are mixed but not give it a paste consistency and leave few small lumps so it will look like ricotta cheese.

Thats it !!! Really simple and quick, but better yet SUPER TASTY !!!!!!

Así que el otro día hice una lasaña vegana, y por supuesto quería hacerlo tan delicioso como la versión de carne. El queso es necesario en esta comida, pero como vegana yo no como queso, el daño que causa la lactosa es desastrosa para nuestros hueses, (si, es todo lo contrario a lo que nos han hecho creeer) así que tuve que buscar otras soluciones que le dará la misma textura y un sabor riquisimo. Anacardos son la base para muchas salsas veganas, mayonesas veganas, etc, así que probé esta receta y me encantó !!! Así que aquí está y espero que lo disfrutes.


1 taza de cajas crudas, empapadas durante al menos 4 horas de noche
2 guantes de ajo
1 cucharada de mostaza de dijon
1/2 cucharadita de cebolla
1/2 taza de levadura nutricional para dar ese sabor a queso
1/4 taza de jugo de limón
1/4 taza de caldo de verduras


Coloque todos los ingredientes en una licuadora, el pulso hasta que todos los ingredientes se mezclan, pero no darle una consistencia de pasta y dejar algunos pequeños bultos por lo que se verá como el queso ricotta.
YA ESTA !!! Realmente simple y rápido, pero mejor aún DELICIOSO !!!!!!
