For some reason I saw not one but twice in less than a week breakfast ideas with quinoa, the curious thing about this is that I never ever saw this idea before. So I took this as a sign that I needed to try and make a recipe with quinoa as a breakfast, after all quinoa is a very healthy food and it is actually not a bad idea to start the day with a strong healthy meal.
Like always the ideas I saw were not 100% healthy or vegan so I had to put my chefy knowledge to work and get a recipe that suit my eating habbit and have to say it absolutely work for my taste. This recipe is very simple, nothing fancy but yet very tasty and of course healthy. So here I go!
Ingredients for Breakfast Berry Quinoa:
- 2 cups of almond milk
- 1 cup of quinoa
- 1 tbsp of chia seeds
- ¼ tsp of cinnamon
- 2/3 cup of berries mix
- ¼ cup of maple syrup
- 1/3 cup of almonds
- On a medium sauce pan, boil the almond milk.
- Add the quinoa and let cook for about 10 minutes, stirring occasionally.
- Add the chia seeds and let cook for another 5-10 minutes, till the quinoa is cooked.
- Turn heat off then add the berries, cinnamon, maple and almonds then mix all ingredients well together.
- Serve and enjoy!
