So today I got super pumped to makes these cookies since I haven baked freshly made cookies specially citrus or herb flavored ones. Usually I always have lemons on my fridge, like ALWAYS and too many, so when I saw the words rosemary and lemon words together last night on food network I knew I could create a recipe with these flavors. So I went to google and search for “rosemary lemon recipes” however I had cauliflower on my mind, but then scrolling down I saw…COOKIES! Ufff, I knew right then that I needed to create cookies with these flavors. So today I got ready to bake and when I went to the fridge to get my lemon… I did not have lemons. Uhhh, seriously Steph? Now what? I already started the recipe!!! So I had to make last minutes improvements.
I decided to just scratch of the lemon flavor and add some cranberries that I found on my pantry. I was already thinking of sprinkle the cookies with almonds since recipes does have almond extract…SPOLER ALERT!!! So, I finished the dough and instead of chilling it on the fridge… I chilled it on the freezer, oh no, what had I done now? Well, the frigging dough was solid as a rock in less than 15 minutes because it has butter. Now this easy and simple recipe is becoming a pain in my neck because I had to let the dough outside and wait for it to soften so I can roll it and chill it again on the FRIDGE, yes, I learned my lesson guys.
Okay so cookies were baked and I took them out of the oven and yes frigging cookies smells fantastic but…. They lost their beautiful shape! Aaaaaah, why?! I left
them to get cool down to so I can see if at least they taste good and boy oh boy they are good cookies. Did not got a beautiful flowered shape like I wanted but I definitely got good tasting cookies, great for killing those frigging munchies. Of course they did not only had to be approved by me but also by my boys and they ate them without asking any questions so I am pretty sure I can add this new cookies to the book. Hey chocolate chips cookies were I UPS! And yet ended being the best mistake ever made!!!! Yummoooo!
