         It is that time of the year where a perfect vegan chilli is a must for a warm cozy comfort night. I’m going to be honest here, I am not a big chilli girl; I simply don’t go crazy on it. But when I am craving some chilli, girl, it needs to be perfect.  So imagine my problem when I change my diet to a vegan one, I was not sure if I was going to be able to find a really good vegan version of chilli.


            As a vegan I have to look for a lot of vegan meat substitutes out there and truth is that not a lot has been approved by my food lover picky taste.  I had try everything I had seen and there been only a few that I had love, so imagine my surprise when I found this meatless ground meat that tastes just like regular meat, I know! I was like … heavennnn!!! I eat it all the time and my kids had not even realized that it is not meat, because believe me, I had tried to trick them by giving them “meat” but they mostly said “mommy I don’t like the meat”. However with the “Gardein” brand they had never said anything, as a matter of a fact they ask for a second round.


            The other day I was watching a YouTube video where a fitness youtuber was talking about meals and she talked about chilli.  Let me tell you this, I got hungry and my mouth watered just thinking about chilli.  I copy the recipe and I figured out how I could make some changes to make it mine mine and vegan and this was what I came with. The original recipe did not even had meat on it, but, since I have a meatless diet I wanted to create a meal that had a lot of protein on it so I added the meat.


            Original recipe also had some sugar in it, but since I want to keep the recipe as healthy as possible I just skipped that step.   I did not wanted sugar on my meal.  At the end of the day the result was good and tasted delicious.  Again, it was kids approved, they ate it all and did not complained about my chilli, as a matter of a fact they questioned me if that was really not meat lol.

Alright lets go to the recipe shall we.



Serves: about 6                      Prep: 15 minutes                   Cook: 30 minutes


2 tbsp of olive oil

2 onions, chopped

1 big bell pepper, chopped

1 ½ tsp of sea salt

1 ½ tsp of fresh ground black pepper

3 tbsp of chilli power

1 can of pink beans, rinsed

1 can of kidney beans, rinsed

1 cup of frozen corn

28 oz of crushed tomatoes

8 oz of tomato sauce

6 oz of tomato paste

13.7 oz bad of vegan ground meat



In a deep cook pan add the olive oil with the onions, pepper, chilli power, salt and pepper and sauce for a minute so the onions get lightly browned.

Add the meat and mix with the onions and stir for another minute so the meat soaks the onions flavors.

Now add the beans and the corn and mix all well together, then go ahead and add the tomatoes and the tomatoes sauces.  Again, mix all well.

Cook for 15-20 minutes in low heat with the lead on.  The meat wont need to be cooked for too long, but we want the tomato sauces to caramelized a little and all the flavor to marry each other well.

Turn the heat of, rest for 2 minutes.
