

Delicious vegan creamy tropical dish, loaded with nutrients. Serve with white or brown rice and enjoy. This coconut stew is super easy to prepare, two steps to take and let cook girl.
Today I wanted to create a new meal, something different, I always use puertorican flavors so I new I wanted to spice things up and use something out of my comfort zone. One thing I knew I wanted to use was curry, I had never cooked with this spice and believe it or not it has been on mu pantry for a while, but everytime I saw a recipe with this ingredient I would omit it.
I had the feeling that I was going to hate this spice even thought I never tried it to know. So today I decided to give it a try, don’t know what got in to me with this spice but I wanted it. Well it turn out that it smelled amazing, what the hell I was thinking about taking this spice out of the list? As soon as I give it my first taste I felt like I was in heaven, seriously.

The mix of the coconut milk, with the freshness of the mangoes, the hint of spice of the paprika made this stew perfect, seriously, my son had a second plate of it, that doesn’t happen that often.
My main goal was to create a new recipe for my cook book and my “Mindful Eating” program, but, I had to share this with you NOW. So go ahead try this recipe I was super easy to create, only two steps and let it cook and move on to your next thing.
Serves: 5 Prep: 10 minutes Cook: 23 minutes

Ingredients
– 1 tbsp of coconut oil
– 1 onion, diced
– 1/2 cup of sun dried tomatoes
– 2 tsp of ginger powder
– 3 garlic cloves, minced
– 1 tbsp of curry, powder
– 1 tsp of smoked paprika powder
– 1/4 tsp of sea salt
– 1/4 tsp black pepper
– 1/2 red bell pepper, diced
– 12 oz coconut milk
– 1 cup of white wine
– 2 tbsp of tomato sauce
– 1 can of chickpeas
– 1/2 cup of cashews, raw
– 1 1/2 cup of spinach
– 1 cup of mango, cubed
On a big sauce pan add the coconut oil and onions and saute for 3 minutes, or until onions are translucent.Add the rest of the ingredients and cook for 20 minutes.Enjoy with your favorite side or as in the picture with some white rice.Buen Provecho!
